1 box Betty Crocker* Red Velvet Cupcakes with Cream Cheese Frosting
1/2 box (113 g) instant chocolate pudding mix (about 6 tbsp/90 mL)
2/3 cup (150 mL) water
3 tbsp (45 mL) vegetable oil
1 egg
Decorating sprinkles (optional)

?Heat oven to 350ºF (325ºF for dark or nonstick pan).
?Line baking sheet with parchment paper or lightly spray with nonstick cooking spray.
?In medium bowl, beat cupcake mix, pudding mix, water, oil and egg on low speed until moistened; beat 1 minute longer on medium speed.
?Drop batter by one slightly heaping tablespoon onto baking sheet.
?Bake 11 to 13 minutes until set. Cool 2 minutes; remove from baking sheet to cooling rack. Cool completely.
?Knead frosting packets for 10 seconds; cut corner off of each packet. For each whoopie pie: spread equal amount of frosting on bottom of 1 cooled cookie. top with second cookie. If desired, sprinkle sides with decorating sprinkles.
