It is common for this to happen, on startup, after the header has been setting in the sun for awhile. The sun's heat on one side of the auger expands the metal over it's entire length. This expansion causes the auger to bow and contact the stripper plates. Usually the stripper plates are positioned close to minimize straw carry over. This close setting of the stripper makes heat distortion of the auger more of a problem. I suggest that you leave the stripper plates close to auger. Prior to start up, rotate the auger 1_2 turn and wait 5 minutes before operating the feeder. This will help equalize the temperature and reduce the bow.
