Recipes Slow Cooker Sweet & Sour Meatballs

1 box Frozen Compliments Swedish Meatballs
1 Each red, yellow and orange pepper, cubed
1 Red onion, chopped
1 can Pineapple chunks
3/4 cup Compliments Chicken Broth, 30% Less Sodium
1/2 cup Compliments Tomato Ketchup
3 tbsp Brown sugar
2 cloves Garlic, minced
1 tsp Sweet paprika
1/2 tsp Hot pepper flakes (or more to taste)
1 tbsp Cornstarch
4 cups Cooked rice
1 tbsp Chopped fresh coriander

1. Place meatballs, peppers and onion in slow cooker. Drain pineapple chunks, reserving 1/4 cup (60 mL) juice (use remaining juice for another purpose). Combine pineapple chunks, reserved pineapple juice, broth, ketchup, sugar, garlic, paprika and hot pepper flakes. Add to slow cooker. Cover and cook on LOW for 3 hours or until meatballs are cooked and vegetables are tender.
2. In a small bowl, whisk together cornstarch and 2 tbsp (30 mL) water until smooth. Stir into meatballs and let simmer 15 min. in slow cooker. Serve over cooked rice with coriander.

I love meatballs but I hardly ever make them as making the meatballs themselves seems time consuming. I guess if I really want these I can always buy them from the store but homemade does still taste the best.
